Brandon Tolliver, a student in the Hospitality
Services Program, demonstrates the proper technique
in cutting a pineapple while instructor Paul Smith
observes. The pineapple is the International
Symbol for welcome and hospitality. This began
when ship captains would return from a voyage and
place
pineapples on their gate post or porch giving notice
to friends: "The ship is in! Come join us... Food
and drinks for all!"
